Can anyone help me out on this...What is the difference between a penetration and submersion probe?

I see brochures that advertise a penetration probe and a submersion probe they both appeared to look like the same probe. Do the function differently i.e. response time, semi-solid food, moisture, one works better then the other and why?|||The penetration probe has a point; the submersion probe doesn't need one.
